Ingredients
Pies:
  • 1 pkg. (18.25 oz) devil’s food cake mix
  • 1 pkg. (4 servings) instant chocolate pudding mix
  • ½ cup butter, softened
  • 4 eggs
  • 1 cup water
Filling:
  • 12 tablespoons butter, softened
  • 1 cup marshmallow crème
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract

Pies:
  1. ♦ Preheat oven to 350°
  2. ♦ To make pies, combine cake mix, pudding mix, butter, eggs, and water in large bowl of an electric mixer. Beat at low speed until just moistened. Beat at medium speed, scraping bowl frequently, for 2 minutes, or until light and thick.
  3. ♦ Drop heaping tablespoons of batter 2 inches apart on greased baking sheets. Pies should be about 3 inches in diameter after baking.
  4. ♦ Bake about 15 minutes or until pies spring back when touched lightly. Remove to wire racks to cool completely.
Filling:
  1. ♦ While pies are cooling, prepare filling. In a large bowl, combine butter, marshmallow crème, sugar and vanilla. Beat 2 minutes with an electric mixer at high speed until mixture is light and fluffy.
  2. ♦ Spread filling on the flat side of half the cookies and top with the remaining cookies to make sandwiches.
  3. ♦ Makes about 20 pies.
