With a fork, mash up soft avocados (without pits and skin, of course) in a medium sized bowl until smooth. Add oil, juice from 1/2 lime and onion flakes. (You can use fresh onion if desired, I find the flakes easier to use, without hurting the taste.) Mix with fork until well blended. Add a splash or two of hot sauce, and mix again. For the hot sauce I prefer habanero, which is very hot, but any sauce will do to give the guacamole a little bite. For an authentic taste, don't use Tabasco. Every recipe I've seen for guacamole says to refrigerate for an hour before serving, I never do that. My wife and I eat it right away!
