♦ Place stew meat and flour in a bowl or large resealable plastic bag. Toss to coat.
♦ Set Instant Pot to sauté and heat oil in the uncovered pan.
♦ Add coated beef to pot and brown on all sides.
♦ Add broth, tomatoes, onion, garlic, carrots, any extra flour and seasonings.
♦ Stir to combine. Pressure-Cook on high for 35 minutes.
♦ Let the pressure drop naturally and carefully remove the lid.
♦ Add peppers to the pot, adjust sauté setting to ‘less’ and simmer, uncovered, until the peppers are tender.
