Instructions
  1. Mix:
    ♦ 1 tsp. garlic powder
    ♦ ½ tsp. salt
    ♦ ¼ tsp. black pepper

    Sprinkle over:
    ♦ 4 chicken breast halves

    Grill or broil seasoned chicken, keep warm.
  2. In a large skillet, over med-high heat, heat:
    ♦ 1 Tblsp. olive oil

    Add:
    ♦ 1 8 oz. package baby portabellas, sliced
    ♦ 1 small zucchini, sliced
    ♦ ½ cup red onion, chopped
    ♦ 4 garlic cloves, minced
    ♦ 1/4 tsp. salt
    ♦ 1/8 tsp. black pepper
  3. Sauté for two minutes and add:
    ♦ 1 cup plum tomato, chopped or a fresh tomato, seeded and chopped
    ♦ ½ cup fresh basil, torn or snipped
    ♦ 4 tsp. balsamic vinegar

    Sauté all veggies for three minutes longer, until tender and heated through.

    Spoon veggies over the chicken and serve with a sprinkle of
    fresh grated Parmesan cheese…over your favorite pasta!
