Ingredients
Cake
  • 2 extra-large or large eggs
  • 1 cup vegetable oil
  • 2 cup sugar
  • 1 tsp. vanilla
  • 1 tsp. baking soda dissolved in 1½ tsp. water
  • 4 cups apples, thinly sliced - Macs taste great
  • 2 cups flour
  • 2 to 3 tsp. cinnamon
  • ½ tsp. salt
  • 1 cup chopped walnuts or pecans, optional
Frosting
  • 3 oz. cream cheese
  • 1½ tsp. melted butter
  • ¼ tsp. vanilla
  • 1 cup powder sugar
Instructions
Cake
  1. ♦ Beat eggs with oil until foamy.
    ♦ Add sugar, vanilla, baking soda and water.
    ♦ Add flour, cinnamon, and salt.
    ♦ Add apples and nuts if desired.
  2. ♦ Grease and flour a 9 x 13 cake pan. Pour in and spread out batter.
    ♦ Bake at 350 degrees for 50-60 minutes, until a toothpick comes out clean.
    ♦ Cool cake for a little while, usually 15 minutes, then spread frosting on warm cake.
Frosting
  1. ♦ Mix cream cheese, butter, vanilla and powdered sugar until smooth.
    ♦ Spread over warm cake.
