Ingredients
  • 1 cup stick 1/2butter
  • 2 large Vidalia Onions sliced
  • 1 sleeve Rita Crackers crushed, 1 packet
  • 1 cup shredded cheddar cheese
Instructions
  1. Melt butter in a large skillet, add onions and sauté until soft.
  2. Pour 1/2 of the onions into a 10 X 7 inch casserole dish.
  3. Top with 1/2 the crushed crackers, then 1/2 the cheese.
  4. Repeat the layers.
  5. Bake at 350 degrees for 15 minutes, until cheese is melted.
  6. Cut in squares to serve,
Terri's Notes

~ I think it tastes like onion rings.
~ Definitely better fresh from the oven than reheated, but it's quick to make so making it fresh isn't a chore.
~ Great side dish, especially with anything grilled.
