TURKEY SHEPHERD'S PIE

Ingredients
  • 2 cups cubed cooked turkey
  • 1 Tblsp. butter
  • 2 carrots diced or shredded
  • 1 celery stalk diced
  • 1/2 onion diced
  • 1 cup gravy
  • 1/2 cup chicken broth
  • 2 cups prepared stuffing
  • 1-2 cups whole kernel corn drained, or green beans, peas.
  • 2 cups warmed mashed potatoes (add a bit of butter milk or broth to make creamy again)
  • 1/2 cup grated cheddar cheese
Instructions
  1. Heat butter and saute carrots, celery, and onion until soft, about 6 minutes. Add the gravy and broth, heat. Salt and pepper to taste.
  2. In a greased 2-qt. baking dish, layer the turkey, gravy mixture, stuffing and corn or beans. Top with potatoes. Sprinkle with cheese.
  3. Bake, uncovered, at 325 degrees for 30 minutes or until edges of potatoes are browned.
