Ingredients
  • 6 Large Potatoes
  • 3/4 cup sour cream
  • 1 stick butter
  • 1 tsp. sugar
  • v tsp. salt or to taste
  • ¼ tsp. pepper
  • 2 Tblsp. chopped chives
  • 2 tsp. dill weed
  • 1 pkg. frozen spinach thawed and chopped, cooked and well drained
Instructions
  1. Cook potatoes and mash with sour cream, butter and seasonings. Beat until fluffy.
  2. Stir in spinach (or a couple cups cut up, cooked broccoli
  3. Serve at once ~ Or put in a buttered baking dish, sprinkle with 1 cup shredded American or cheddar cheese, and bake at 400 degrees for about 20 minutes, until heated through and all cheese is melted.
  4. Can be made a day ahead, will need to be baked 30-40 minutes to heat through.
