Ingredients
  • 1 Red Pepper - chopped
  • 1 Green Pepper - chopped
  • 1 Medium Onion - chopped
  • 1 can of black-eyed peas - drained
  • 1 can of pinto beans - drained
  • 1 can of shoe peg corn - drained
  • Mix and bring to boil:
  • 1 cup of vegetable oil
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
Instructions
  1. Cool slightly and pour over veggies - marinate over night - drain and serve.
Terri's Notes

- Mix the colors of peppers to use what you have, or just to make it pretty! Throw in a purple, yellow or orange one too!
- Feel free to add a chopped tomato.
- Good with chips, and great as a side or topping for grilled meats.
