In a medium sized, heavy bottomed sauce pan over medium heat, melt butter.
Add oats and stir for 2 minutes. You’ll smell them roasting, they’ll turn golden and at the end they may start to ‘pop’.
Quickly and carefully add all the water, it will boil up and steam!
Stir, reduce heat to a simmer and cook without stirring for 20 minutes.
Add salt, cinnamon, milk, raisins and walnuts. Stir and cook for 10 minutes more.
Add vanilla and brown sugar, Stir and serve!
~ This one takes a little extra time, but it’s so worth the effort! Very satisfying too.
