Ingredients
  • 1 Acorn squash
  • 1 large baking apple unpeeled, cut in chunks (Cortland or Granny Smith are good)
  • 2 butter
  • 2 Tblsp. brown sugar
  • chopped walnuts
  • cinnamon
Instructions
  1. Preheat oven to 425 degrees.
  2. Spray a jelly roll pan or 13X9 pan with cooking spray.
  3. I also pour a bit of water into the bottom of the pan, just to make clean-up easier.
  4. Cut squash in half. Remove seeds. Bake, cut side down, for 30 minutes.
  5. Remove squash from oven and turn it over.
  6. Fill center of each with ½ of a chopped apple (mixed with sausage if you like)
  7. Dot each with 1 Tblsp. butter.
  8. Sprinkle each with walnuts.
  9. Sprinkle each with 1 Tblsp. brown sugar and a couple shakes of cinnamon.
  10. Bake for 30 minutes more, or until squash and apples are tender.
Terri's Notes

Sausage is a nice touch and makes this a whole meal. I like sage or maple flavored bulk sausage. Just brown, drain and mix with the raw apple.
