Ingredients
  • 1 dozen eggs hard cooked and peeled
  • 1/2 cup frozen chopped spinach thawed and drained, squeezed dry.
  • 1/4 cup mayo
  • 1/4 cup real bacon bits
  • 2 1/2 tblsp. cider vinegar
  • 1 tblsp. sugar
  • 1 tsp. black pepper
  • 1/4 tsp. salt
Instructions
  1. Perfect hard boiled eggs: Put eggs in a pot with enough water to cover and bring to a boil. Immediately, cover with a lid, turn off heat and let sit for 20 minutes!
  2. Cool eggs. Peel, cut in half lengthwise, scoop out yolk, and mash yolks with a fork.
  3. Add remaining ingredients and mix well.
  4. Spoon yolk mixture into egg halves.
  5. Chill until ready to serve (should chill 2 hours or overnight to let the flavors blend.)
Terri's Notes

Not feeling that adventurous? My own special recipe calls for salt and pepper, only enough Miracle Whip to moisten the egg yolks, and the “secret ingredient….Western Dressing (shhh!) 1-2 Tblsp. depending on how many eggs you us. Adds wonderful flavor and great color!
