Ingredients
  • 1 lb. bulk Italian sausage
  • 3 (14.5 oz.) cans chicken broth
  • 1 (14.5 oz.) fire roasted tomatoes, undrained
  • 3-6 cups kale, coarsely chopped
  • 1 (16 oz.) can navy beans, drained and rinsed
  • 1 (9 oz.) package fresh or frozen cheese tortellini, optional
Instructions
  1. ♦ Heat a large saucepan or dutch oven, brown sausage.
    ♦ Add broth and tomatoes, bring to a boil.
    ♦ Stir in kale, (and tortellini if desired) reduce heat, cover and simmer until kale is tender and tortellini is done.
    ♦ Stir in beans, cook 1 minute more or until heated through.
  2. ♦ Garnish with some shredded Parmesan, serve with crusty whole grain bread. YUM.
Terri's Notes

~ This is so good, fast and easy -1 pan, seasoned by the sausage and tomatoes.
~ I added minced onion and a sliced carrot to the sausage while it was browning.
~ You could add garlic or other veggies of choice, great way to sneak in extra veggies!
