Ingredients
  • ¼ cup butter
  • 1 cup diced onion
  • 1 clove minced garlic
  • 2 tsp. curry powder
  • ½ tsp. salt
  • ½ tsp. cumin
  • 1/8 tsp. cayenne pepper
  • 1 16 oz. can broth chicken or vegetable
  • 1 16 oz. can pumpkin
  • 2 cups half-and-half
Instructions
  1. Melt butter in a large pot over medium heat.
  2. Add onions and garlic, sauté until softened and fragrant.
  3. Stir in seasonings, then add broth and simmer for 15 minutes.
  4. Wisk in pumpkin and cream until smooth and cook for 5 minutes more.
  5. Bring just to a boil, then remove from heat.
  6. Serve hot, garnished with sour cream and chive or croutons.
  7. You may blend for a smoother version, but I like the onion bits!
