Ingredients
  • 2 cups rolled oats
  • ¾ cup packed brown sugar
  • ½ cup wheat germ
  • ¾ tsp. cinnamon
  • 1 cup flour
  • ¾ tsp. salt
  • ½ cup honey
  • 1 egg beaten
  • ½ cup oil
  • 2 tsp. vanilla
Instructions
  1. Preheat oven to 350 degrees. Generously grease a 9 x 13 pan.
  2. In large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour and salt.
  3. Make a well in the center, and pour in the honey, egg, oil and vanilla.
  4. Mix well using your hands.
  5. Pat the mixture evenly into the prepared pan.
  6. Bake for 27-29 minutes, until the bars begin to turn golden at the edges.
  7. Cool for 5 minutes, then cut into bars while still warm.
  8. Do not allow the bars to cool completely before cutting!
  9. Makes 2 dozen bars or squares.
Terri's Notes

~ Instead of oil, I used a mashed ripe banana I had on hand. And added ground flax seed in place of the wheat germ (flax is also gluten free!)
~ Dried fruit bits, raisins or mini-chocolate chips make a nice addition too!
