Ingredients
  • 8 oz. pkg. corkscrew penne, or bow tie pasta, cooked and cooled
  • 1/3 in lb. fresh snow peas trimmed and cut½ on the diagonal
  • 2 in red bell peppers cutstrips
  • 4 green onions thinly sliced
  • 3 cups fresh broccoli florets
  • 2 cups cooked meat - optional (chicken turkey, shrimp, pork)
  • Dressing:
  • 1 Tblsp. sesame oil
  • 1 Tblsp. peanut butter
  • 2 Tblsp. rice wine vinegar
  • Hot sauce to taste
  • 2 tsp. honey
  • 1 tsp. garlic powder
  • 1/2 tsp. ground ginger
  • 1/4 cup sesame seeds toasted
  • salt and pepper to taste
Instructions
  1. Toss pasta, snow peas, red pepper, scallions, broccoli, and diced meat.
  2. Whisk dressing ingredients until creamy; pour over the pasta mixture.
  3. Toss lightly. Serve chilled
