Ingredients
  • 3 cups fresh, canned or frozen sweet corn
  • 2 Tbsp. olive oil
  • 1 cup red onion, diced
  • 1-2 tsp. chili powder
  • 1 tsp. cumin
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1½ cups tomatoes, diced
  • 4 Tblsp. fresh cilantro, snipped
  • 3 Tblsp. cider vinegar
  • salt and pepper to taste
Instructions
  1. Lightly sautè onion in olive oil, until it begins to soften.
  2. Add chili powder and cumin and sautè for 1 minute longer.
  3. In a pretty bowl, combine corn, peppers, tomatoes, and cooled onions.
  4. Add cilantro and vinegar. Toss to combine.
  5. Salt and pepper to taste.
  6. Chill for a couple of hours before serving.
Terri's Notes

~ Great use for last night’s fresh corn on the cob!  If it was grilled, all the better.
