Ingredients
  • 12 cups /1 lb. spinach leaves- washed with stems removed
  • 2 cups sliced strawberries
  • 2-11 oz. cans mandarin oranges drained
  • ½ cup sliced green onions
  • ¼ cup pine nuts or ½pecans
  • Orange Honey dressing
  • ¼ cup honey
  • ¼ cup orange juice
  • 2 Tblsp. vegetable oil
  • 2 Tblsp. Dijon mustard
Instructions
  1. Be sure the spinach is well rinsed and dried. I put it in a big Tupperware bowl with a paper towel on the top and store it sealed, upside down, in the refrigerator to keep it crisp.
  2. Wash, hull, and drain the strawberries. Slice.
  3. Mix dressing ingredients in a jar and shake to combine refrigerate.
  4. Last minute. In a BIG bowl, combine the spinach, chopped onions, strawberries, oranges, and nuts.
  5. Pour the dressing over the salad when ready to serve or the spinach will be limp
