Ingredients
  • 2 cans sliced water chestnuts drained and chopped
  • 1 small red onion finely chopped
  • Marinate overnight in:
  • ¼ cup cider vinegar
  • ¼ cup oil
  • 1/3 cup sugar
  • Drain water chestnuts and onion and mix with
  • 2 cans LeSeur peas drained
  • ½ cup chopped pecans
  • ¼ cup mayonnaise just enough to hold it together
Instructions
  1. Mix and chill before serving. Best if made the day before serving.
Terri's Notes

- May add a little chopped pimento or shredded carrot for color.
- May add a bit of shredded cheddar cheese or cheese crumbles.
