Ingredients
  • 1 can of black beans rinsed and drained
  • 1 can of corn drained - Summer Crisp, bi-color, super sweet
Instructions
  1. Any chopped veggies you want to add, diced
  2. Green, red and yellow pepper
  3. grape tomatoes, halved
  4. yellow squash
  5. cucumber
  6. zucchini
  7. red onion
  8. The point is a colorful mix of your favorite veggies, more is better.
  9. Pour on about 2/3 bottle of Italian dressing (if you want to be adventurous, use balsamic vinaigrette) Mix together and voila!
  10. Chill completely before serving.

Susan mixed this up in a bright yellow bowl, it was simple and gorgeous!

- What a great way to eat healthy and teach your children all the fresh vegetables. Let them choose their favorites and help cut them up.
