Ingredients
  • 2 cups small curd low-fat cottage cheese
  • 1½ -2 cups chopped fresh spinach
  • 1 cup shredded Mozzarella cheese
  • ½ cup finely chopped onion
  • 1/3 cup grated parmesan cheese
  • 4 large eggs, beaten
  • 1 tsp. oregano
  • 1 7 oz. jar roasted red peppers-drained, chopped or
  • ½ cup chopped fresh red bell pepper
Instructions
  1. ♦ Mix all ingredients. Pour into a buttered 9-inch pie plate.
    ♦ Bake at 350 degrees for 40 minutes or until center is set and edges are a golden brown.
  2. ♦ This recipe can be made the night before and baked in the morning.
    ♦ Reheats well too.
