Ingredients
  • Dressing: mix:
  • 1/3 cup mayo
  • 1/3 cup plain yogurt
  • 4 teaspoons apple juice or orange
  • ½ tsp. salt
  • Toss:
  • 5 cups cooked chicken breast cubed or chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped green onion
  • 1 - 16 ounce can pineapple chunks or tidbits drained
  • 1 - 8 ounce can sliced water chestnuts drained
  • 1 cup sliced green pepper
  • 1 cup seedless green grapes
  • 1 cup seedless red grapes
  • 1 cup shredded cheddar cheese
Instructions
  1. Add dressing, mix and chill for at least 4 hours Top with 3/4 cup salted cashews.

Great served with crackers or breadsticks
You look like a gourmet if it’s served in a melon or pineapple half!
