Ingredients
  • 4 loin chops, ½ inch thick
  • oil or butter
  • salt and pepper
  • 4 cups sweet potato chunks, pre-cooked
  • 1 large apple, sliced or cut in large pieces
  • 1/4 cup onion, chopped
  • 3 Tblsp. brown sugar
  • 4 tsp. corn starch
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • 2 Tblsp. vinegar
  • ¾ cup apple cider
Instructions
  1. ♦ In a heavy skillet, over high heat, brown chops quickly in a bit of oil or butter - just a minute or two on both sides. Arrange chops in a baking dish, sprinkle with salt and pepper.
  2. ♦ Core and chop or slice apple. Top chops with apple and sweet potatoes.
  3. ♦ Don’t clean skillet, add onion and sauté until it softens.
    ♦ Mix brown sugar, cornstarch, cinnamon and salt. Stir in cider and vinegar.
    ♦ Pour into skillet with the onions, bring to a boil and stir until thick.
    ♦ Pour over chops, potatoes and apple.
    ♦ Cover with foil and bake and 325 degrees for 40 minutes.
Terri's Notes

~ Sweet potatoes can be canned or leftover from last night.  I usually bake mine the night before, peel and store in the fridge.  We enjoy them often and in many recipes.
