Sweet Potatoes - fat, roundish potatoes for slicing
Fresh lime or lime juice
Fresh Cilantro, snipped
Bake potatoes at 350 degrees, for about ½ the time you would normally. They will be easy to slice, but still very firm and hold together for grilling.
Slice cooled potatoes, lengthwise, into slices about 1/3 inch thick.
Oil both sides of each slice and season with sea salt and cumin.
Grill until fork tender, turning once.
Serve hot off the grill with a squirt of fresh lime juice and a generous sprinkle of cilantro.
Toss gently to coat, adding a bit more oil and seasoning to taste.
