Ingredients
  • Sweet Potatoes - fat, roundish potatoes for slicing
  • olive oil
  • cumin
  • sea salt
  • Fresh lime or lime juice
  • Fresh Cilantro, snipped
Instructions
  1. Bake potatoes at 350 degrees, for about ½ the time you would normally. They will be easy to slice, but still very firm and hold together for grilling.
  2. Slice cooled potatoes, lengthwise, into slices about 1/3 inch thick.
  3. Oil both sides of each slice and season with sea salt and cumin.
  4. Grill until fork tender, turning once.
  5. Serve hot off the grill with a squirt of fresh lime juice and a generous sprinkle of cilantro. Toss gently to coat, adding a bit more oil and seasoning to taste.

~ Bake potatoes for tomorrow night while your making dinner tonight…WIN!
~ Mix up your favorite flavor combinations: Season with cinnamon and serve with brown sugar butter, season with chipotle powder or cumin/chili powder and serve with sour cream.
