Ingredients
  • 3 in Large Tomatoes cutwedges or cubed
  • 1 cucumber sliced or diced
  • 1 small red onion thinly sliced
  • ½ cup kalamata olives pitted
  • ¼ cup olive oil
  • 1 Tblsp. fresh oregano minced
  • 6 oz. feta cheese cubed or crumbled
  • ¼ tsp. sea salt
  • ¼ tsp. freshly ground black pepper
Instructions
  1. Combine tomatoes, cukes, onion, and olives.
  2. Add oil, oregano, salt and pepper; toss to coat.
  3. Sprinkle with feta to serve. Serves 8.
