  • CourseSides, Snacks & Serving A Crowd
Ingredients
  • 2 cups fresh basil, directly from garden is best (packed in measuring cup before processed)
  • ½ green or red bell pepper
  • 3 to 4 cherry tomatoes (an additional one for garnish)
  • 2 cloves of garlic
  • 2 -15 oz. cans garbanzo/chickpeas, drained
  • 3 to 4 Tblsps. olive oil
  • juice of 2 to 3 lemons (or limes) about ¼ cup
  • ¼ cup pine nuts (toasted) reserve a few for garnish
  • 3 pinches of cumin
  • Sea Salt/Himalayan salt to taste
  • 12 shakes of tabasco (yummy), or less if not a fan
Instructions
  1. Process basil, cherry tomatoes, pepper and garlic cloves first.
  2. Pop in remaining ingredients and process till smooth. Add a bit of water if too thick.
  3. Put in a bowl and garnish with basil leaves and tomato pieces to make it look like a flower.
  4. Drizzle with a little olive oil in the center, after basil/tomato flower is made.
  5. Sprinkle with pine nuts on top if desired.
Terri's Notes

I have made this with less basil for those who aren’t basil-holics, and with lemon or lime.
Tabasco is optional, but I love a little kick. Good stuff!
Serve with your favorite cracker or veggies.
This is also great spread on sandwiches or wraps, especially veggie wraps.
