Ingredients
  • ¼ cup butter
  • 1 onion chopped
  • 3 stalks celery chopped
  • 2 cloves garlic diced
  • 3 Tblsp. flour
  • 24 oz. chicken broth
  • 1 pound fresh asparagus chopped
  • 1 potato peeled , diced
  • ¾ cup half & half
  • ½ tsp. white pepper
  • 1 tsp. salt
  • 1 Tblsp. lemon juice
Instructions
  1. Melt butter in a soup pot. Add onions, celery, and garlic and sauté until tender.
  2. Stir in flour and mix well, stirring constantly until smooth.
  3. Add chicken broth, asparagus, and potato.
  4. Bring to a boil. Reduce heat and simmer until asparagus and potatoes are tender.
  5. Transfer to blender or food processor and puree until smooth. Return to pot.
  6. Stir in half
  7. Serve with a garnish of croutons and/or parmesan cheese.
