Ingredients
  • 5 cups fresh bread cubed and dried, good
  • 1 lb. mild bulk breakfast sausage
  • 1 large onion diced
  • 3/4 cup celery diced
  • 1 Tblsp. poultry seasoning
  • 3/4 cup dried cranberries
  • 1 Granny Smith apple diced
  • 4 Tbls. butter
  • 3/4 cup broth or stock
Instructions
  1. *Prepare bread. I use ½ wheat, ½ white, sour dough is good. You may cube it, spread it on a cookie sheet and bake at 350 degrees for about 7 minutes. Cool. Or dad and I preferred to toast
  2. it in the toaster, light to golden, and leave it out overnight. Then we cut it into cubes. 10-12 slices of bread, depending on the thickness. You can also use 4 cups plain stuffing cubes and increase the broth to with 1¾ cups or a 14.5 oz. can of broth.
  3. Sauté sausage and onion in a heavy-bottomed skillet or saucepan until well browned.
  4. Stir in celery, seasoning and cranberries, stir and heat to soften just a bit.
  5. Pour sausage mixture into a big mixing bowl. Top with apples and bread cubes.
  6. Melt the butter and add broth to the same pan, scraping up all the sausage bits.
  7. Pour butter and broth over bread and toss gently to mix.
  8. Pour into a buttered casserole dish and bake uncovered, at 350 degrees for one hour.
