Ingredients
  • 1 32 oz. bag frozen corn thawed
  • 1 pieces green pepper diced into small
  • 1 small sweet onion finely diced - or 1/3 of a large
  • 2 cups finely shredded cheddar cheese
  • 2 cups mayo
  • 1 9 oz. bag of chili cheese Fritos
Instructions
  1. Mix corn, pepper, onion and mayo in large bowl.
  2. Pour into a 9 x13 dish. Chill to allow flavors to blend.
  3. To serve, crush Fritos in the bag and sprinkle over salad.
  4. Hint: make a pin prick hole in bag before crushing chips- it works better
Terri's Notes

~ This quirky little recipe gets rave reviews where ever it goes!
~ I use ½ red pepper and ½ green, I like the colors.
~ I make this with Birds Eye C&W Corn - crisp, sweet.
~ Easy to make ½ a recipe in a 10 X 6 inch dish.
