Ingredients
  • 3 pounds of boneless skinless chicken breasts, cooked and cubed
  • ½ 12 oz. bag of broccoli slaw with shredded carrot
  • 20 oz. can pineapple tidbits drained
  • 15 oz. can mandarin orange sections drained
  • ½ large or 1 small red pepper diced
  • 4 Tblsp. Honey MUSTARD not the salad dressing
  • Lite Miracle Whip enough to hold the salad together
  • salt and pepper to taste
Instructions
  1. Chill completely to let flavors meld.
  2. Serve on bed of fresh spinach leaves, in a fresh tomato blossom, in a wrap, a pita pocket, or on a flaky croissant.
Terri's Notes

- Make ½ batch using short cans of pineapple and oranges.
- This is beautiful, crunchy, filling, but “lite”, what’s not to love?
