Ingredients
  • 1 8-11 oz. pkg. dried apricots quartered
  • 1 12 oz. can apricot nectar
  • 2 lbs. whole baby carrots cooked to tender-crisp
  • ¼ cup brown sugar
  • 2 Tblsp. butter
  • ¼ - ½ cup sliced almonds
Instructions
  1. Soak apricots overnight in nectar.
  2. Mix nectar, apricots, sugar, and carrots in a casserole dish.
  3. Dot with butter and sprinkle with almonds.
  4. Bake at 350 degrees for 30-40 minutes
