Ingredients
  • 10 oz. broccoli florets
  • 10 oz. cauliflower florets
  • About ½ of a medium cauliflower and the same amount of broccoli
  • 1 cup Cheddar cheese, shredded
  • ½ cup sour cream or plain yogurt
  • 1 tsp. Dijon or whole grain mustard
  • salt and pepper to taste
  • 1⁄4 cup dry bread crumbs
  • ½ Tblsp. melted butter
Instructions
  1. ♦ Steam broccoli and cauliflower for 6-8 minutes, depending on how small you broke up the pieces.
    ♦ We want it crisp-tender, not tender-crisp! Drain.
    ♦ Arrange steamed veggies in a baking dish.
    ♦ In a bowl, mix together cheddar cheese, sour cream or yogurt, mustard and salt and pepper to taste.
    ♦ Spread cheese mix evenly over veggies in the baking dish.
    ♦ Melt butter and stir in dried bread crumbs until evenly coated. Sprinkle over cheese topping.
  2. ♦ Bake at 375 degrees for 15 to 20 minutes, until melted and golden. OR, if the veggies were piping hot, put it on the second rack under the broiler and broil until cheese is melting and crumbs are browned.
