Ingredients
  • 1 1/3 cups flour
  • 3/4 cup quick-cooking oatmeal
  • 2 tsp. baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup melted butter
  • 1 cup blueberries, fresh or frozen
  • 1/2 cup powdered sugar
  • 1/2 teaspoon almond extract
  • milk
Instructions
  1. ♦ Mix together flour, oats, baking powder and salt.
    ♦ In a small bowl, stir together egg, sugar, milk and butter.
    ♦ Pour butter mixture into the dry ingredients and stir just to moisten. Batter will be lumpy.
    ♦ Fold in the blueberries.
    ♦ Spoon batter into a lightly greased 8x1½ inch round baking pan.
    ♦ Bake at 400° for 20-25 minutes or until a toothpick comes out clean.
  2. ♦ In a small bowl, mix together powdered sugar, almond extract and just enough milk to make a thin icing. Drizzle over warm cake. Serves 8!

~ Not too sweet, just a little something to make breakfast special or serve with tea.
