Ingredients
  • Seasoning mixture:
  • 2 ½ tsp. paprika
  • 1 tsp. salt
  • 2 tsp. garlic powder
  • 1 tsp. black pepper
  • 1 tsp . onion powder
  • 1 tsp. cayenne powder
  • 1 tsp. oregano
  • 1 tsp. thyme
  • Soup ingredients:
  • 2 Tblsp. olive oil
  • 2 boneless chicken breasts cut into 1" cubes
  • 1 medium yellow or red onion
  • 2 cloves of garlic chopped or more
  • 1 cup carrot chunks
  • 1 14.5 oz. can chopped tomatoes with juice
  • 1 14.5 oz. can non-fat reduced sodium chicken broth
  • 1 cup of fresh spinach leaves torn into pieces
  • 1 cup cauliflower chunks
Instructions
  1. Season the chicken with seasoning mixture.
  2. In a large sauce pan, heat the oil. Sauté the chicken pieces until lightly brown.
  3. Remove chicken from pan and add onions, garlic and carrots. Stir for about 3 minutes.
  4. Return chicken to the pan along with the cauliflower, tomatoes and broth.
  5. Simmer partially covered for about 20 minutes.
  6. Stir in spinach and cook 5 more minutes. Serve.
Terri's Notes

~ This is a hearty, healthy soup with a little kick, great ‘medicine’ for a cold!
~ While using all of the seasoning mix may be very healthy, I seasoned the chicken with about 1/3 on the mixture, and then added more to the soup to taste.
~ Store any leftover spice blend in a clean dry container to use on meats, veggies, eggs, in stews! It is a wonderful mix to keep on hand.
