Ingredients
  • 11/2 cups old-fashioned oatmeal (3 cups oatmeal)
  • ½ cup sugar or 1/4 cup brown sugar (3/4 cups brown sugar)
  • 1/2 cup milk 1 cup + 2 tblsp. Milk
  • 1/4 cup melted butter (1/3 cup butter)
  • 1 egg beat lightly (2 eggs)
  • 1 tsp. baking powder (1 tsp. Baking powder)
  • 3/4 tsp. salt (¾ tsp. Salt)
  • 3/4 tsp. vanilla extract (1 ½ tsp. Vanilla)
Instructions
  1. (parenthesis are amounts for recipe doubled)
  2. Combine the ingredients; mix well. Spread evenly in a greased 9x13 in. baking pan.
  3. Bake at 350, for 25-30 minutes or until edges are golden brown.
  4. Immediately spoon into bowls and top with milk.
Terri's Notes

-Hearty, healthy, great start for cold winter mornings!
-Part of what makes this fabulous is the 'roasting' of the grain and nuts, you smell and taste it.
-Do add dried fruit and nuts before or after baking, add cinnamon, nutmeg, or top with fresh fruit, chopped nuts, or coconut! Mix almonds, cherries and almond extract; apples, walnuts and maple flavoring; make up your favorite flavor combinations.
-Can easily be refrigerated in serving bowls and reheated.
